Roof Top Dining at The Beaumont in Fortitude Valley

Sip cocktails under the stars and savour modern Australian cuisine atop Fortitude Valley’s chicest rooftop dining destination

The Brisbane Travel Guide acknowledges the Turrbal and Yuggera people, the Traditional Custodians of the land on which The Beaumont is situated. We pay our respects to their Elders, past, present and emerging, and recognise their continued spiritual and cultural connections to Country.  Always was, always will be, Aboriginal land.

In the heart of Fortitude Valley, The Beaumont Hotel is poised to become the city’s premier rooftop beer garden. Offering a unique blend of modern Australian cuisine, innovative cocktails, and a relaxed open-air ambience, the Beaumont promises to be a must-visit destination for locals and visitors seeking an elevated dining experience.

Behind The Beaumont is Danny Webster-Clamp, a hospitality veteran from the UK, with a diverse international background, including managing boutique hotels in London and nightclubs in Moscow (and a super all-around friendly guy!).

Danny’s vision for The Beaumont emphasises local produce, simplicity, and an enjoyable guest experience, all while maintaining a deep appreciation for agave spirits, which is reflected in the venue’s extensive tequila and mezcal offerings.

With its strategic location just a short stroll from Fortitude Valley Train Station, The Beaumont Hotel is set to become a central hub for those seeking a laid-back lunch, sunset drinks, or a lively night under the stars.

Its unique blend of authentic Australian flavours, innovative design, and commitment to exceptional service positions The Beaumont as a standout addition to Brisbane’s dynamic hospitality scene.

The Vibe

As you wander up the stairs and enter The Beaumont’s rooftop oasis, you’ll walk past comfy booths and straight to a sleek outdoor bar, which sets the scene for relaxed afternoons and chilled nights.

You’ll find the beer garden by the outdoor pool, featuring oversized umbrellas that offer wooden tables and benches, shade by day, while festoon lights flicker to life as the sun sets.

Inside, the open kitchen takes centre stage, perfect for diners who love a bit of theatre with their meal.

The Great Dividing Range inspires the aesthetic, blending burnt orange, eucalyptus green and navy tones with timber textures and native greenery. It’s effortlessly cool, casually elegant, and undeniably on-trend—The Beaumont brings an elevated but approachable vibe to Fortitude Valley.

The Chef

Head Chef Joshua Kelly is at the helm of The Beaumont’s kitchen, whose culinary vision perfectly aligns with the venue’s laid-back yet stylish atmosphere.

With years of experience leading top kitchens across Brisbane, Joshua brings a passion for local and native produce to every plate.

His menu is a signature reflection of his personal style—modern yet grounded, with a deep respect for Australian ingredients and a flair for presentation.

Drawing inspiration from the country’s natural beauty, his dishes balance rustic charm and contemporary finesse. From the bold flavours to the artful plating, every element is thoughtfully crafted to elevate the dining experience.

The Menu

The food at The Beaumont Hotel captures the essence of modern Australian dining, celebrating both innovation and local ingredients.

From the Byron Bay burrata served with chargrilled mango and crisp witlof salad, to smoky Mooloolaba king prawns generously drenched in aromatic red gum and garlic butter, each dish is thoughtfully crafted to showcase Australia’s diverse landscapes and coastal heritage.

For diners looking to embark on a foodie adventure, the menu presents unique offerings like the Crocodile and lemon myrtle spring rolls or the Bushranger hot dog, boldly topped with tender grilled kangaroo sirloin and complemented by a zesty bush chutney.

Even the side dishes proudly showcase their Aussie heritage, particularly the skin-on Vegemite fries dusted in house-made Vegemite salt, a playful homage to a beloved Australian staple.

For pizza lovers, The Beaumont reinvents classic flavours like the Spicy Surfer, a playful yet balanced combination of fresh chilli, chargrilled pineapple, and succulent prawns. Or the Outback pizza, with lemon myrtle kangaroo and a delicate Kakadu plum glaze. Meanwhile, the Sunburnt Peach pizza pairs grilled peaches with salty prosciutto.

For those seeking a classic steakhouse experience, the Carrara MB7 Wagyu rib fillet is impeccably cooked and paired with a rich Granite Belt red wine jus.

Desserts such as wattleseed pavlova and dark chocolate tart with leatherwood honey provide a sweet conclusion to the dining experience.

You’ll also find all your pub favourites here, such as burgers and chicken parmi.

The Drinks

The rooftop bar at The Beaumont isn’t just about the food—it’s a destination in itself for cocktail lovers.

Under the creative direction of Bar Manager Tiwene (TK) Kaimoana, the drinks list is bold, imaginative, and unmistakably Aussie. Whether you’re here for sundowners or late-night vibes, every sip tells a story of native ingredients and global influences.

Standouts include the Outback Blaze Margarita, a fiery twist on a classic, where tequila and Cointreau meet bush tomato and chilli-infused agave. Prefer something smoother? The Milo Flip blends spiced rum with Milo syrup and condensed milk—a nostalgic nod to Aussie childhoods, reimagined for grown-up palates.

For a burst of colour and flavour, the Aussie Sunrise mixes vodka with finger lime, kakadu plum, and lemonade. Meanwhile, Release the Kraken is your go-to if you like your nightcap creamy and caffeinated—coconut and macadamia rum meet Mr Black and fresh coffee for a rich, decadent finish.

Of course, it’s not just the cocktails that shine. The bar also serves a handpicked range of local craft beers and top-tier Aussie wines, carefully selected to complement the food menu. Whether you’re after a casual schooner or an experimental creation topped with lemon myrtle caviar, The Beaumont has your drink sorted.
